Meet: Gondola Gondola’s Elliott McBride

It’s been over a year since Gondola Gondola opened and they’ve become known for making food of amazing flavours and a cocktail list that’s among the most exciting in town. With another hot summer ahead, GG’s bar manager Elliott McBride has put together a new cocktail list that’s nothing short of stellar. It’s all based around a philosophy the entire team share – that Gondola Gondola is not only a place people come to eat, but come to experience. Not only do they take pride in the product they produce, they take pride in the experience they create.

“My cocktails tie into the experience of using Asian flavours with modern bar techniques,” Elliott says. “I love using exotic ingredients to create a list with a completely original approach.”

He’s done just that and it’s a very hands-on process with syrups and liquor infusions all done in-house. One particularly interesting cocktail, The Ron Hook, is a combination of Ron Zacapa 23 Rum, Luxardo Maraschino Liqueur, Antica Formula Vermouth, Mozart Dark Chocolate and Chocolate Bitters. Or how about the Chrye A Fashion On, made from chai tea and smoke infused Rittenhouse rye, Cinnamon Agave Syru and Angostura Bitters? Be it some amazing food or exotic cocktails, Gondola Gondola’s proving it’s got it all.
