The iconic Mount Lofty House has undergone many changes in the past year, with so much more left to come. The latest addition to the property, HVR – Hardy’s Verandah Restaurant, is set to join the exclusive list of South Australian luxury dining experiences. Starting off, the dining room ornaments are minimum, the picturesque view over the Piccadilly Valley is clearly the star here and purposefully, nothing distracts from that.
Taking Mount Lofty House to new heights is an all-star team pulled locally, nationally and internationally. Head chef, Wayne Brown steps in with international experience in the kitchens of Michelin Star and hatted restaurants such as Urbane, Quay, Two Rooms (Toyko), Waku Ghin (Singapore) and most recently, Sake in Double Bay, Sydney. Taking care of things front of house, restaurant manager Charity Waltenbaugh moving over from Chicago and comes with 25 years of experience in some of the top dining rooms in the USA including Acadia and Graham Elliot, both 2 Michelin Star venues. Adelaide-born head sommelier, Patrick White, joins the team with a wealth of experience both locally and interstate. He’s also one of the first Australian sommeliers to attain the Advanced Certificate offered by the Court of Master Sommeliers. It’s a sure guarantee that whatever Wayne puts out in the kitchen, Patrick will have a wine to match.
Taking a step back to the food, Wayne’s cooking is a blend of French-Japanese and in respect to HVR, he’s very big on using local and seasonal produce. They’ve even got a phrase for it: “Valley-to-Verandah” with the Piccadilly Valley serving as the restaurant’s foraging grounds complemented by a soon-to-be-installed on-site garden. Wayne takes locality and seasonality to the next level as the menu immerses guests in the character and changing seasons of the Adelaide Hills. He’s also a barbecue fanatic with his own custom designed charcoal grill in the kitchen, quite possibly at the top of his kitchen wish list upon coming to HVR. The food is nothing short of amazing, but what’s even more ambitious is a menu that changes with the seasons, you’ll be unlikely to have a dish here twice.
Pulling an all-star cast in a state of the art facility with some of the world’s best produce at their disposal, this might just be the new benchmark for luxury dining in South Australia.
